The image shows layers of fig ganache with an Apricot Pâte de Fruit prior to enrobing in chocolate. Available seasonally in my assorted chocolate range.

I also teach students how to enrobe truffles and cut ganaches such as this one in my Chocolate School as part of the Chocolate Skills and Truffle Making courses.
