Seashell Sculpture Cake

Seashells were the perfect theme for this coast-side wedding cake at the Hotel Tresanton in St Mawes, Cornwall.

Gorgeous muted pastel tones for the chocolate seashells with a little pearlescence and flecks of 23ct edible gold leaf.

Oysters, scallops, mussels, sea urchins, starfish (amongst other shells and a large ammonite!) were each individually handmade using Madagascan white chocolate. Set onto sculpted sheets of chocolate crafted to shape and build the height of this two tiered cake centre-piece.

Two of my ever-popular flavours were chosen for the soft sponges – Strawberry & Champagne with Swiss meringue buttercream and Strawberry cream cheese buttercream. Lemon & Elderflower with homemade lemon curd and elderflower buttercream. Delicious!
