Raspberry Chocolate Peony
I love trying different techniques with chocolate. To achieve the beautiful pink colour in the pure chocolate flower, dried raspberries are mixed with white chocolate. Not only is it a purely natural way to add colour to the cake, there is also a fabulous zing of flavour of the raspberry – and a fantastic finishing touch to the cake.
This particular cake was delivered to Hotel Tresanton, St Mawes.
